Recently, the joint launch meeting for the "Key Technological Innovation and Industrialization Demonstration of Engineering Food Manufacturing" and the "R&D and Demonstration of Efficient Specialized Pre-processing Intelligent Equipment for Food Processing" projects under the national key R&D program in the 14th Five-Year Plan was held in Wuxi.

The "Key Technological Innovation and Industrialization Demonstration of Engineering Food Manufacturing" project is led by Jiangnan University, with the participation of 10 units. Professor Fan Daming, Dean of the School of Food Science at Jiangnan University, serves as the project leader. The "R&D and Demonstration of Efficient Specialized Pre-processing Intelligent Equipment for Food Processing" project is led by Jiangsu Kaiyi Intelligent Technology Co., Ltd., with Professor Gu Zhengbiao, Vice President of Jiangnan University, as the project leader.

During the joint launch meeting, the two project leaders reported on the overall progress of their respective projects. The project leaders focused on presenting research content, implementation plans, annual schedules, and the status of the launch's three questions. Expert panels raised inquiries and discussions on the execution and management plans of the two projects, acknowledging the comprehensive research content and reasonable plan design. They provided specific suggestions on milestone control, task allocation, assessment criteria, fund utilization, and proposed further deployment and requirements.

It is reported that the "Key Technological Innovation and Industrialization Demonstration of Engineering Food Manufacturing" project has a duration of 4 years. The project aims to address challenges in the engineering food industry such as biomimetic food structure design, nutritional optimization, processing techniques, and quality preservation. The project will break through key technological barriers in engineering food manufacturing and demonstrate industrialization. The focus areas include analyzing the formation mechanism of engineering food quality, establishing new pathways for precise control of food structure and nutrition, researching core technologies for new types of engineering food shaping, maturation, and sterilization, and developing key manufacturing technologies for engineering food restructuring, biomimetic production, precise nutrition design, and quality preservation.

The "R&D and Demonstration of Efficient Specialized Pre-processing Intelligent Equipment for Food Processing" project has a 4-year duration. It primarily addresses issues in China's food pre-processing industry, such as significant variety in pre-processing methods, lack of specialized equipment, labor-intensive processes, and low levels of automation. Following a research approach focusing on theoretical studies, key technological innovations, intelligent equipment development, and data fusion for optimized control, the project aims to enhance key pre-processing technologies and equipment for fruits, vegetables, meat, poultry, and aquatic products. The project will progress incrementally towards integrated implementation, ultimately overcoming critical bottlenecks in China's food pre-processing industry and laying the groundwork for its high-quality development.
